Chef Federico Pucci
At Don Alfonso 1890, Head Chef Federico showcases his passion for Italian gastronomy and farm-to-table philosophy with dishes that honour the seasonality and original flavours of his ingredients. Calling upon his 16 years of culinary expertise, he creates edible works of art that have earned his restaurant a Diamond Award from Trip.Best Gourmet.
Chef Noboru Arai
At the young age of 26, Chef Arai opened HOMMAGE to pay tribute to his beloved hometown of Asakusa in Tokyo and his love for French gastronomy. Using modern French cooking techniques, he draws out the inner expression of his Japanese produce, creating culinary masterpieces that have earned two MICHELIN Stars for their respectful approach to both cuisines and cultures.

As CHAOYUE's Executive Chef and co-founder, acclaimed Chef Seven demonstrates his deep understanding of authentic Chinese culinary culture and advanced contemporary cooking concepts, creatively infusing his Cantonese dishes with cultural heritage and modern aesthetics. He received his first Black Pearl Restaurant Guide Young Chef honour in 2021 and was listed among Forbes' "China's 30 Under 30 Chefs" in 2023 and 2024. He has also led CHAOYUE to receiving One Diamond from the Black Pearl Restaurant Guide and a Platinum Award from Trip.Best Gourmet.
